| Cooking Instructions | Preheat oven to 325˚ F. Adjust oven rack to middle position. Add 1 t BUTTER or OLIVE OIL to coat inside of loaf pan and lightly dust with 1 T FLOUR. Beat 2 EGGS and SUGAR PACK (included) in large bowl with mixer until thick and light-colored, approx. 4-5 mins. Smash 3 RIPE BANANAS with fork until yogurt-like consistency. Add BANANAS, ⅓ C PLAIN NONFAT YOGURT, and VANILLA (included) into bowl with eggs. Stir until just combined. Add FLOUR MIX (included) to banana mixture, and stir until just combined (do not over-mix). Pour batter into buttered loaf pan, and place in center of oven. Bake for 50-65 mins., or until a toothpick inserted into center comes out slightly moist but not wet. Note: if you wait until the toothpick is completely clean, the bread will be too dry. |
